7 Healthy One-Pot Meals With a Latino Twist

Face it: preparing food can result in a lot of pots and pans that need to be cleaned and it can be a hassle when all you want to do after eating is to relax after a hard day's work. So when you're feeling extra lazy, here are some one-pot meals you can make at home that are healthy, too.

1.) One Pan Mexican Quinoa

This recipe from Damn Delicious involves cooking everything in one pan -- even the quinoa! The advantage of putting the quinoa in one pan with all the ingredients is that it absorbs the flavors and spices, making every bite flavorful, full of texture and most of all, nutritious.

2.) Latin Chicken and Rice Pot

Upgrade your chicken and rice recipe game by adding the goodness of olive and pepper salsa with this recipe from The Food Network. The avocado and garlic sour cream also bring a new whole dimension to what is considered to be plain chicken and rice. The remaining salsa and sour cream garnish can also be used with plantains and corn chips as dips.

3.) Cuban Ropa Vieja

If you're a fan of slow cooking and tender beef flank steak, this recipe from Healthy Latin Eating is something you should try out at home. According to the blogger, the beef can also be substituted with chicken, pork or a combination of all three as they all can be made tender, shredded and filled with saucy goodness that's perfect over hot rice.

4.) One-pot Burrito Bowls

Craving Mexican food or burritos? Why not make it at home and make it healthier, too. This recipe from I Heart Naptime combines burrito ingredients with rice to make it into a healthy and delicious burrito bowl. If the use of store-bought taco seasoning turns you off, you can substitute it by making your own at home.

5.) Spanish Chicken and Potatoes

You can never go wrong with anything chicken, potatoes or both. This recipe from Pinch of Yum takes the flavors of Spanish tomato salsa and simmers it with chicken and potatoes. It is best served on top of white rice.

6.) Chorizo Breakfast Hash with Sriracha Honey Lime Sour Cream

This one's a brinner (breakfast for dinner) winner and comes from Spoonful of Flavor. For a recipe that involves a lot of ingredients, making this using only one pot is efficient and hassle-free.

7.) Slow Cooker Mushroom Paella

Paella is usually made with seafood, but this recipe from The Latin Kitchen substitutes it with meaty mushrooms. This can easily be made into a vegetarian dish by using vegetable broth instead of chicken.
